自家制腸粉

媽咪昨天問我: 想試做腸粉嗎?荷蘭的姨姨有一個很簡單的食譜啊。其實小時候見到別人捲腸粉已覺得很好玩,所以即刻試做。

粘米粉 80-90g
鷹粟粉 15-20g
水 480g
蔥花隨意(*可隨個人喜好放入鮮蝦,"腸仔"等)
~約有9-10 條腸粉
 
加數滴橄欖油掃均蒸盤
加一湯匙粉漿再排上餡
大火蒸約3 分鐘
用蛋糕刮刀捲起即可 (*因找不到蛋糕刮刀我用了鑊鏟XD)
 
吃腸粉沾甜豉油及沾醬是很重要的,所以我另外煮了甜豉油及磨了芝麻醬。Perfect match!

Homemade Cheesy Hamburger Patty


Hubby would like to have hamburger patty for yesterday dinner. Since I am not fond of frozen hamburger patty, I decided to make my own fresh ones. Actually you can also buy those fresh 和牛 patty from Japanese superstores however they cost nearly a hundred and so it is more economical to make on your own for casual dinner and keep the budget for special dinners.
 
I planned to make a cheesy one as it is more mouthwatering so I bought grated parmesan cheese . Simple steps:
Season the beef mince (mine was from New Zealand) with l tsp salt & 1/2 tsp pepper
Add 1 tsp olive oil (extra virgin)
Sprinkle grated parmesan and stir well
Shape the meat patty with *cling wrap and set them aside for 30 mins in fridge
*tips: cling warp help you to shape the patty in a easy and clean way at the same time keep moisture
 
The final step is just to pan fry the hamburger patty or you can make a Japanese  kids meal 漢堡扒煎蛋飯 by adding one side pan fried egg and Japanese rice!

Green Monday: 味付玉子昆布味噌湯拉麵

今日又是GREEN MONDAY的日子,因昨晚做了味付玉子,於是決定今晚吃昆布味噌湯拉麵。拉麵是購自數字店,我家中有很多煮食材料都是從此店入貨。湯底我是用味噌加昆布做的。Toppings加上木耳、蔥粒同黑蒜乾粒,最後放上半隻預先做好的味付玉子便成。

親子丼

 
今日忙於陪妹妹fitting, 回家時已經8點左右,唯有check一下雪櫃有那些材料。眼見有雞柳和雞蛋,就想起親子丼。「親子丼」即滑蛋雞肉蓋飯,是日本家庭常做的家庭料理。因為蓋飯同時有雞肉同雞蛋,所以稱「親子丼」。我的廚房常備料理酒,味醂(みりん)同柴魚湯,只要加入洋蔥及大蔥,便可以做親子丼。再加上在ocean three 購入的八爪魚刺身,便是一餐簡簡單單的日本料理。

Baked Thai style curry chicken in french bread w/ risotto in parmesan cheese curry sauce

Today I "created" a new dish and I decided and developed my own recipe with zero reference.
 
I would say this recipe is very succesful and allow me to say it tastes pefect! The chicken inside the bread is so tender while the bread is so crispy and the curry sauce is full of aroma from thai ingredients and so think that it matches perfectly with the risotto. Just grate some parmesan on it to make it cheesy. bon appetit!

自家制大眼仔latte

我無奶茶癮,不過有抹茶牛奶癮 LOL!多年前係日本京都飲咗一次之後就上癮了。濃濃的抹茶香配上綿密的奶泡實在太夾了。我第一次飲既係 iced matcha latte,後來發覺熱的更能保存抹茶甘香。
 
在街飲一杯好既抹茶latte唔算便宜,如經常喝也可自己沖調。今日我試大眼仔latteart,圖案滿意,但奶泡略嫌唔夠綿密,還是在cafe既較專業XD

Green Monday: 비빔밥

自從從事了F&B既市場策劃工作之後,我開始有Green Monday的習慣。其實Green Monday一點也不難實行。只要你不強迫自己只食green salad,怕感覺似牛似羊(kidding),其實Green Monday都可以有好多美食選擇,這樣會比較容易持之。
 
今日Green Monday我決定整 비빔밥。비빔밥,即韓式拌飯。其實整韓式拌飯非常方便,只要你家中有好的韓式辣醬, 再加入屋企有既幾種蔬菜。我最愛用菠菜、木耳同泡菜,再加一顆蛋,拌勻熱飯,醒胃又有營養素。加上植物dietary fibres,非常健康!

祖傳雲吞麵@麥兆記

今天到中環開會,約老公lunch,他提議試麥兆記[祖傳]廣州雲吞麵。真的很不錯,特別是銀絲麵,非常爽口,一碗雲吞麵既靈魂在於其麵底,果然是祖傳。

中意抹茶既人,尤其女仔真係會咩綠茶甜點好唔放過。去完超市經過見到間平民餅店有綠茶蛋糕,雖然樣子很平凡並不算吸引,還是被那抹茶綠令我入手一件。味道不錯有抹茶的回甘味,如果連中間的cream也有抹茶粉而且厚一些會更好!
